Sometimes I just want to get really creative...

Kiwi Chocomon Cookie

Kiwi Topping on a Cinnamon & Chocolate Crumble Cookie




Chocomon Cookie


½ cup seeds, soaked, rinsed and drained (sesame, flax, chia)
½ cup nuts (walnuts and pistachios)
¼ cup cacao nibs
½ cup dried fruit (prunes, raisins, dried pineapple)
2 tablespoons cold-pressed olive oil
½ teaspoon vanilla powder
¼ teaspoon cinnamon

  1. Process all ingredients until smooth.
  2. Serve with fresh apple, peaches and/or kiwi slices.

This comes out very crumbly. Dates or more oil could be added to make it stick together better. Dehydration or refrigeration will help it hold its shape, but it is also enjoyable fresh from your food processor.
